Disentangle npm install and npm build.

Previously this would cause an error since the plugin wasn't able to
determine an OCR format from the empty string, we now simply forward the
empty string to the rest of the analysis chain.

Setting this option to `off` or `false` will make sure that the passages
are simply returned in order of their ocurrence in the input document,
and not based on their relevancy score in relation to the document.

We will always fix erors that can occur during XML segmenting (missing
closing tags) and some hOCR specifics. Optional, however are various
code branches that aim to fix things like unescaped pointy brackets
or illegal entity declarations. These fixes come with a bit of a
performance hit and are not needed for most users, hence they are
disabled by default.

- Introduce possibility to skip tags like `<br>`
- Replace illegal characters like isolated `<` or unterminated `&` with an underscore
