Add Zarr Collection

Add a new generate_zarr_stac method. The method takes as input an xarray.Dataset object, which will be written to Zarr (remotely only at the moment). It generates a STAC Collection with one Item and one Asset, taking inspiration from https://earthdatahub.destine.eu/api/stac/v1/collections/era5/items/reanalysis-era5-land
