Minimal changes were implemented to streamline the deployment process
and make it easier to use this project as template for other projects.

Change [container registry](https://gitlab.inf.unibz.it/commul/docker/ctap/container_registry):
`.../RELEASE_TYPE/ctap-image:VERSION` -> `.../app:VERSION`

Version 2022.11.1

This is a maintenance release: minimal changes were implemented to make
the deployment process work outside the k8s cluster and instead with
docker-compose.

Update docker-compose components:
- split docker-compose into files to be used with extends
- add proxy_network for portainer
- use (more) ENVs
- minor changes to services' names

Keep using main -> stable -> production branch workflow.
